dinner!

tried a new recipe tonight: onion baked chicken

1.5 lbs chicken parts (or just boneless-skinless chicken breasts if you're like us)
1.5 t. oil
1.5 t. onion powder
3/4 t. italian seasoning
1/2 t. salt
1/4 t. garlic powder
1/4 t. aprika

brush chicken with oil. mix seasoning in small bowl. coat chicken evenly with seasoning mixture. place in shallow baking pan.

bake 375 for 20-25 in (okay, that i just guessed, because i am assuming chicken parts would have the bone, but boneless ones don't need to bake 45-50 min). ooh, the recipe says "or until chicken is done" so just do the knife and fork test like we do and when it's not pink, you're good.

>$2 per serving.

kind of a blah weekend

Friday: DH didn't get home until 9. Yup, he didn't make it home much before then all last week. guess that's what he gets though for some good OR (operating room) time!
I got lost in the internet for a bit, then finished up some Christmas swap cards, and organized my scrap stuff for Saturday.

Sat: went to the gym (wahoo!) then to scrapping. Lunch at Uno's was free, courtesy of Jen's two-fisting. Pizza skins are my new love. Due to rain, stayed scrapping until 8, and upon getting home, DH was already in bed, he was just exhausted for some reason....we hope he's not getting sick!

Today: I of course slept until 1030, which beats my noon, but not by much! I made a grocery list, cleaned the fridge, and got ready. DH surprised me with lunch at City BBQ, and then we did our weekly shopping. Only saved 3 in coupons, but it wasn't even a big shopping day, so that's okay.

on our menu this week: Onion Baked Chicken (which called for "chicken parts" and well, we just got the regular boneless-skinless breasts), Taco Ring (an early marriage fave that i'm bringing back!), sandwiches, and "hodge-podge" because we don't want to many leftovers because we aren't eating at home next week..because we'll be eating with these lovelies:

Do you want a puppy fix? what's that, you do??? well, okay, just this once though, alright? (yea, who am i kidding?)

oooh and PS: graham crackers are seriously one of the best inventions!

Show Us Your Life

I loooove reading Kelly's Korner, and each week she does a fun post about our lives (show us where you live, cute kids party ideas, ...) and today is wedding dresses!

I loved my dress! I found it 3 weeks after our engagement, so, Jan 2003. We didn't marry until July 2004 but this was the dress i loved so I got it right away! It was a halter style, because I didn't feel comfortable in strapless. The beading was on the top, and the train was detachable, because I did not want to fuss with a bustle!

Here are a couple scrapbook pages of my loooove DH and me! High school sweethearts, and ten years later, we're still so much in love! We continue to laugh daily, have fun, and lean on eachother as best friends.

My mama!

And my girls! Loved the black and white dresses, because i could do fun pinks for my flowers! (although, they hated the shoes I found for them!) These girls still play a part in my life and I love them! (I look so ready to be done with pictures!)

So, now go play along, and become an avid Kelly's Korner, reader too!

Flavors

I have tried two ummmmm, interesting flavors this week.

First, Rachel’s cottage cheese. I like cottage cheese with lots of pepper or a sprinkling of Mrs. Dash. My FIL likes it with pears and a salad dressing. Other don’t even like it (DH for example). Well, Rachel’s makes it in 3 flavors (at least that is what they have at my local store)…..2 involve fruit and one is the flavor I tried. I cannot do fruit and cottage cheese….and I cannot do cottage cheese on a salad either.

I selected “cucumber dill” and when DH asked last week why I hadn’t tried it, I replied “I’m scared,.” He said I shouldn’t waste it so Monday, I brought it to work and tried it.

Result: they should have named it pickle. (yea, I know, cucumbers and dill make pickles, but I just wasn’t expecting it to taste like a pickle!....it was decent on some ritz-like crackers, though).

Second, Dannon Light and Fit yogurt. I do like L and F anyway, but this new flavor had me intrigued for a couple reasons……

Watermelon. (this is an inside joke for DH and me) and what? A juicy fruit as yogurt? Hmmmm.

Results: definitely ain’t bubbalicious! And, I won’t be trying Cantaloupe L and F anytime soon!

(ps, I typed this in word, thus, things are capitalized and punctuation is maybe better)

haven't had much to say lately worth blogging. not sure why that is. hmmm.

well, a new kind of chicken tender just rolled into our town

Triscuit Chicken
1 lb. chicken, cut into tenders
1 c. triscuit crackers, finley chopped, any flavor
3 T butter
1 clove garlic, minced
1/4 c. shredded parm cheese

mix cheese and crackers. melt garlic and butter. put chicken into butter then coat with crackers. place on parchment papered or greased cookie sheet. bake 350 for 20-25 min.

gives you the fried chicken crunch without the added junk! i bet using the rosemary-olive oil triscuits would be great in this!

also good on salads and in sandwiches.

uh oh silb: we have a new chicken tender to battle the "shake em up" ones we all have come to love! (btw, is that what you're making "up north?")

how bout this, share a recipe you love that is a healthier option but still oh so yummy!
